“Here, at Matrix on the Go, we serve authentic Jamaican food made fresh. A lot of people come by who haven’t been back to Jamaica in years, and this helps remind them of home. Both of my parents were born and raised in Jamaica, and I was born in Montego Bay. They immigrated here in the 90s when I was one, and built their way up from the bottom. My dad was a barber and my mom was a nurse. At home, they would cook both Jamaican and American food. I love their stew peas. I watched as they made these dishes, and cooking became instilled in me. They also both had this dream to open up their own business. They really struggled at times, but always put their best foot forward. Eventually, they opened their first then second restaurant. Now, we’ve been in the restaurant business for the past twenty years. After college, I was actually going to work in IT, sitting at a desk behind a computer all day long. I felt like that would have held back my talents though, so I decided to open this food truck. I had been thinking about it for a while and we finally had the grand opening last October. I feel like it has already helped so many people. I love to see people smile or hear them talk about the truck. Going forward, I definitely want to expand even more and create a franchise. It’s important to spread the culture. It’s important for people to have good food.” (January 2022)
